Breakfast: wheat biscuit, yoghurt, raspberry, honey and pistachio breakfast pots
A quick, healthy and delicious breakfast layered with softened wheat biscuits, creamy yoghurt, fresh raspberries, honey and crunchy pistachios.

3 breakfast wheat biscuits
150-200ml fresh orange juice
500g natural yoghurt
200g fresh raspberries
Runny honey, for drizzling
A handful of chopped pistachios
In a bowl, crush the wheat biscuits into flakes and divide evenly between four small glasses or sundae dishes. Pour enough fresh orange juice over the crushed biscuits to cover them. Refrigerate for 10 minutes to allow the juice to soak into the cereal.
Meanwhile, wash and drain the raspberries. Layer the yoghurt and raspberries over the softened cereal, alternating spoonfuls until the glasses are full. Finish with a generous drizzle of runny honey and a sprinkle of chopped pistachios.
Top tip: prepare the soaked wheat biscuits the night before for an even quicker breakfast. You can also swap the raspberries for fresh mango chunks or sliced strawberries for a delicious variation.
Lunch: tomato salad with feta, pistachios and French dressing
Fresh, colourful and full of flavour, this tomato salad is a simple dish that makes the most of ripe, juicy tomatoes. Creamy feta, crunchy pistachios and fragrant dill are brought together with a classic homemade French dressing for a delicious balance of textures and flavours. Ready in just 10 minutes, it’s the perfect light lunch, especially served with warm toasted pita bread.

For the salad
500g mixed tomatoes (cherry, plum, yellow or beefsteak)
Salt and black pepper
A drizzle of extra virgin olive oil
150g feta cheese
A few sprigs of fresh dill (or 1 tsp dried dill)
65g shelled pistachios, roughly chopped
For the French dressing
¼ clove garlic, finely grated
1 tsp dijon mustard
2 tbsp white or red wine vinegar
6 tbsp extra virgin olive oil
A pinch of sea salt and black pepper
Prepare the dressing by adding the garlic, dijon mustard, vinegar, olive oil, sea salt, and black pepper to a jam jar or a lidded container. Secure the lid and shake well until fully combined.
Wash and quarter the tomatoes, then arrange them on a serving plate. Season lightly with salt and black pepper. Drizzle the tomatoes with a little extra virgin olive oil.
Crumble the feta over the tomatoes, then scatter with the dill and chopped pistachios. Spoon or drizzle over the French dressing just before serving.
Top tip: double the dressing ingredients and store any leftover in an airtight container in the fridge for up to two weeks. Give it a good shake before using.
Dinner: lamb chops with mint and pistachio pesto
Tender, pan-seared lamb chops served with a vibrant mint and pistachio pesto. Perfect for an easy yet impressive dinner, especially alongside buttery new potatoes and crisp green beans.

For the lamb
1 tbsp vegetable oil
8-10 lamb chops
Salt and black pepper
A knob of butter
For the mint and pistachio pesto
65g shelled pistachios, finely chopped
8 tbsp olive oil
30g mint leaves
1 tbsp sherry vinegar
2 garlic cloves, grated
1 tsp lemon zest
50g parmesan, grated
Salt and black pepper
To serve
Boiled new potatoes
Trimmed green beans
To make the pesto, combine the olive oil, mint, sherry vinegar, garlic, lemon zest and parmesan in a food processor. Pulse until the mixture forms a smooth paste. Transfer to a bowl and stir through the chopped pistachios, keeping a small handful for garnish. Season to taste with salt and black pepper. If needed, add a little more olive oil to loosen the pesto.
To cook the lamb, pat the chops dry with kitchen paper and season generously on both sides with salt and black pepper.
Heat the vegetable oil in a large frying pan over a medium-high heat. Add the lamb chops and cook for 8-10 minutes on each side, or until cooked to your preferred doneness.
Add the butter to the pan. Once melted, spoon the butter over the lamb chops, then remove the pan from the heat and allow the meat to rest for a few minutes.
To serve, cook the new potatoes and green beans until tender. Spoon the pesto into a small serving bowl and place it in the centre of a serving dish.
Arrange the lamb chops around the pesto, spoon some of the pesto over them and finish with the reserved chopped pistachios. Serve immediately with the new potatoes and green beans.
Top tip: any leftover pesto can be stored in an airtight container in the fridge for up to three weeks.
