The main inspiration for this dish is the Swansea breakfast at Bara, a much-hyped and nationally famous Welsh-inspired cafe in Peckham, south London.

The way that an unusual mix of cockles, bacon, leeks, eggs and laverbread has been embraced by a cool crowd shows that nostalgic British and Irish dishes are being reinvented and reappraised for a new generation by creative young chefs up and down the land.

There isn’t laverbread in this recipe, but the dijon mustard, combined with the oven-baked eggs that create a kind of savoury bread pudding/Cambrian French toast hybrid, provides similar oomph and moreishness – perfect with the sweet flavour of the Sainsbury’s Taste the Difference baby leeks.

250g Sainsbury’s Taste the Difference rosemary and sea salt focaccia
220g Sainsbury’s Taste the Difference unsmoked air dried streaky bacon rashers
175g Sainsbury’s Taste the Difference baby leeks,
finely sliced
Olive oil
6 Sainsbury’s Taste the Difference golden yolk free range British eggs
250ml Sainsbury’s Taste the Difference Jersey milk
2 tsp dijon mustard
100g Sainsbury’s Taste the Difference Barber’s mature cruncher cheese,
grated
Pinch of black pepper

Heat your oven to 200C (180C fan)/390F/gas 6. Tear the focaccia into large bite-size pieces and spread out in a baking dish. Put into the oven for 3-4 minutes or until the bread has dried out. Then remove from the oven and set aside, leaving the bread in the dish.

Meanwhile, cook the bacon according to packet instructions. Let it cool slightly before roughly chopping into small pieces.

Heat a wide-based frying pan over a medium heat with a drizzle of oil and, once hot, add the sliced leeks with a pinch of black pepper and cook for 4-5 minutes, or until just softened.

Take the baking dish with the dried bread and stir in the cooked leeks and bacon. In a mixing jug, whisk together the eggs, milk and dijon mustard. Pour over the bread mix and set aside to soak.

After 15 minutes, sprinkle on the grated cheese then put into the oven for 15-18 minutes until baked and golden brown.
